PB Day Two - The Best Sandwich of my Life

Peanut Butter Day Two brings us legendary rock and roll food: The Fried Peanut Butter and Banana Sandwich.

We all know the legend, the fat content, the subsequent oversized jumpsuits...The thing that made the Fried Peanut Butter and Banana sandwich so awesome was this: No matter how famous and rich and well-known he was, no matter how many mediocre movies he made or how many women threw their unmentionables at him in Vegas: he was still just a good ol' country boy from Mississippi. And the proof of this was the fact that he came back to his mansion and wanted a simple sandwich fried in a big glob of butter.

Here's the other thing. It's one of the best sandwiches I have ever eaten. In. My. Life.

I inherited this postcard from my husband's bachelor days. He claims to have never made it.

It says, "authentic recipe from Elvis' cook...Mary Jenkins." Sounds like the real deal to me, let's go for it.

2 lg bananas (Mine are small, so I went with 3), 6 slices of white bread (I used a homemade french loaf), 1 cup peanut butter (my homemade peanut butter from yesterday), and 1 stick of butter (it's just normal butter but I parenthesis-ed every other ingredient, and I didn't want the butter to feel left out).

Lightly toast the bread...

Melt the butter in a skillet on low...

Mash the bananas - I used my potato masher...

Add the peanut butter and mix...I kept with the potato masher so I wouldn't have more dishes to wash...

Eventually it will look like this:
May not look appetizing, but I could seriously bathe in that stuff...
Spread on one slice of the bread:

Top with another slice of bread and place in the skillet with the melted butter...

According to Mary Jenkins, we should "brown sandwiches on each side slowly until golden brown"
I think about 5 minutes got me to this:

I flopped some peanut butter mix on one of them...oops.
5 minutes on the other side and you get this:

Sweet momma Gladys in heaven! Makes me want to write a song about a crying hound dog...

Cut open and gorgeous:

Oh, the calories! Oh, the fat!
Eat it with a Diet Coke. They cancel each other out.

I'm totally going to eat this in front of you...

I am not exaggerating, this is really good...

One of the best sandwiches of my life. And I've eaten a LOT of sandwiches in my 39 years.
Here's the recipe...
Peanut Butter and Banana Sandwiches
(Taken from a postcard purchased at Graceland ca. 2000)
2 Large bananas
6 slices white bread
1 stick (1/2 cup) butter
1 cup peanut butter
Peel and mash bananas. Mix peanut butter with bananas thoroughly. Toast bread lightly and spread mix on bread. Melt butter in skillet and brown sandwiches on each side slowly until golden brown.
Eat them warm. Play "Suspicious Minds" in the background. Watch as your wardrobe transforms into white studded jumpsuits, yet never forget your country roots.
