PB Day 21 - Peanut Butter Chocolate Chip Oatmeal Cookie Muffin Cupcake Bars

This is what happens when I don't have a plan.

Or, I guess I should say, when I have a plan that falls through and I don't have a backup.

I was originally going to make these beautiful peanut butter and nutella "purses" out of puff pastry. Well, guess what...my local grocery store doesn't have puff pastry.

All you locals are saying, "well, DUH!"

So I spent most of the morning perusing the list of recipes that I have left for the Peanut Butter Days, and realized I have more recipes than days left. I was never good at math.

So I decided to combine 5 into 1...This is a recipe that combines a peanut butter chocolate chip cookie, a peanut butter oatmeal cookie, a peanut butter chocolate chip cupcake, a peanut butter bar, and a peanut butter muffin. Yeah, my brain is all over the place today.

So? So, let's go.

The usual contenders: Margarine, Peanut Butter, Sugar...

Scrape down the bowl, add an egg and vanilla...

Meanwhile, whisk together flour, oats, and baking soda...

Dump that in...mix to just combined...

Grease your muffin tin, or line with cupcake liners...

Don't judge, Dude...these are left over from 4th of July...

I used 2 scoops of batter in each muffin cup - which is about 2 rounded teaspoons...


Then I topped them with chocolate chips...

Bake 350...about 30 minutes later they look like this:

Well, now aren't those pretty?

But they wouldn't be a proper Cookie Muffin Cupcake Bar if they didn't have frosting:

Powdered sugar, peanut butter, milk...
And the best part: Drizzle over the top...

If less is more, than more is more more, right?
Let that ooze right over the sides, it's not going to bother me none..

They're weird, kinda...but so am I.

Peanut Butter Chocolate Chip Oatmeal Cookie Muffin Cupcake Bars
Adapted from several recipes from the files of Olive Wilson and Laura Sherwood

for the cookie cupcake muffin cupcake bars:

1/2 cup butter
1 cup sugar
1/2 cup peanut butter
1 egg
1 tsp vanilla
1 cup flour
1/2 cup oats (quick cooking)
1 tsp baking soda
1 cup (or so) chocolate chips

For the frosting:

1/2 cup powdered sugar
2 tbsp peanut butter
2 tbsp milk

Preheat oven to 350. Cream together butter, peanut butter and sugar. Add egg and vanilla, mix well. In another bowl, whisk together flour, oats and baking soda. Dump dry ingredients into peanut butter mixture, mix to just combined.

Grease muffin tins or line with cupcake liners. Scoop about 2 tsps of batter into each cup. Top with chocolate chips.

Bake 350 for about 30 minutes.

Meanwhile, whisk together the powdered sugar, peanut butter, and milk. Remove cookie cupcake muffin bars from the oven, immediately drizzle frosting over the top. Cool on a wire rack.

Eat these kinda warm...just like you would any other Cookie Muffin Cupcake Bar!

  1. hmmm... I don't seem to have a muffin pan... how about bars? what would I have to adjust the cooking time to.. LOL I haven't baked in a LONG TIME...so the adjustment times are lost to this brain..

  2. lol they should bake in a 9x13 pan for 25 - 30 minutes...same concept, different shape!
