PB Day 19 - Thank you Robin!

I gave my scales the finger this morning.

However, after yesterday's diabolical Peanut Butter and Coke Milkshake, it's really not my scales' fault.

That's my pattern: Indulge. Complain. Indulge. Complain.

Repeat as necessary.

It's been working for 38 years, why stop now?
To counterbalance our diet day from hades, let's do a few things right today:

1. Joggie-walkie...check. We had a nice breeze from the south, so it was against the wind for half. Surely that burnt about 6500 calories.

2. Water, water, water...check. I've downed 2 16.9 oz bottles so far. When I go potty, the water will take at least 4 pounds with it to the drain.
3. Try something a little lighter in calories. And fat. And carbs. And sugar...well, check!

Robin found me an awesome recipe for crepes. Low fat, carb, sugar...all that.

Crepes, Amy? Really? That's like...French and crap.

Yeah, I know. We'll call them Rustic Crepes. That way if they don't come out too nice, the title says they don't have to be pretty.

Okay...1 egg, 6 egg whites...

Beat until foamy...I did it by hand, you could certainly use a blender...
Add 1 tsp vanilla, 1 1/4 tbsp Splenda, 2 tbsp all natural peanut butter...

Mix that together...
Meanwhile, heat up a skillet and spray with cooking spray.
This is my grilled cheese pan. It's cast-iron...You can use non-stick, whatever...just make sure it's small.

Take 1/4 cup of the crepe batter...Lift the pan from the heat and pour on the batter...quickly turning the pan to get the batter to the edges...
And here's where the "Rustic" in the title becomes very important...

Cook until it begins to look 'dry' in the middle...then flip
Cook for another 30 seconds, take out onto a wire rack.

Let's get to the filling, that's the best part anyways...

I took 1/2 of a block of fat free cream cheese and divided it into 4 bowls...

This one is 2 slices of 97% fat free deli ham and 2 tbsp fat free mozzerella with the cream cheese...
Spread it down the middle, then fold over the edges...
this one is cream cheese, 1/8 tsp cinnamon and 1 tsp splenda....
This one is ff cream cheese, 1 tsp splenda, and a glob of hazelnut spread.

And finally, ff cream cheese, 1 tsp splenda and 4 ripe strawberries...
Roll 'em up, onto the plate.

I'm starting with the strawberry one...
Yummy, look at all that filling...
I'm attacking the hazelnut one next. Get your fork BACK!

Eat all four of these...not very diet-y
Eat one and give the rest away...very diet-y

Seriously, they're not that difficult. Just takes a little patience.

Rustic Peanut Butter Crepes
Adapted from a recipe Peanut Butter Love Haze by Robin Kimble.

Crepes
1 egg
6 egg whites
1 tsp vanilla
1 1/4 tbsp Splenda
2 tbsp all natural peanut butter

Beat eggs until foamy. Add remaining ingredients and mix until smooth. Heat small skillet, spray with cooking spray. Remove the skillet from heat and pour 1/4 cup of batter, quickly turning pan to spread batter out into a thin layer. Cook until middle appears dry, then flip to cook the other side for about 30 seconds. Turn out onto wire rack. Continue to make 4 crepes.

Filling
4 oz fat free cream cheese
Flavorings of choice: ham, cheese, hazelnut spread, strawberries, splenda, cinnamon

Mix together filling ingredients, spread into middle of crepe. Roll edges over the middle and serve.

You should probably wear a beret when you eat these. A FAT FREE beret. Mine's black, because black is slimming.
